经过长时间的发展,啤酒桶的清洗和灌装工艺已经成熟。啤酒厂和啤酒桶装设备生产厂商及科研机构结合在一起,根据啤酒一般的化学成分及生产销售过程中啤酒桶内外的物理变化,采用一般标准的啤酒桶内清洗工艺程序。这个程序包括了残余压力检验、排残酒、水清洗、碱液(和/酸液)清洗、热水清洗、蒸汽灭菌等等。在运行清洗程序中,还包括了浸洗、脉冲清洗、涡流清洗等方式,目的就是为了保证啤酒桶的整个内壁、桶口阀的出酒管内外壁及阀体接合部等所有地方都清洗干净。对特殊成分(如浓度高)的啤酒可以根据用户的要求,编写特殊的清洗程序或选用特殊的清洗介质。二氧化碳背压灌装,装满酒桶的自动控制,已经成为啤酒厂和桶装设备生产厂家的共同基准。对灌装前啤酒的处理,在日本基本上采用精滤的工艺;在欧洲,大部分啤酒厂仍然使用瞬时杀菌机进行巴氏灭菌。许多啤酒厂都在桶装线上安装了在线式氧含量检测仪,对啤酒在生产过程中氧含量是否增加,进行动态监测。
